TUESDAY: Pearled couscous with green and yellow squash. I don’t have a recipe for this- but it’s easy. Make the couscous in a pot while sauteing the squash in a pan with salt/pepper; then combine.
WEDNESDAY: Parmesan spinach quinoa.
THURSDAY: We plan to eat at my Mom’s. But if not, then I’ll make Ramen bowl. I love making this soup because you can pretty much throw anything in there. I’ll be using some broccoli and baby bok choy in this batch.
FRIDAY: Cauliflower steaks with ginger, turmeric and cumin. I’ll probably serve these on a bed of wild rice instead of quinoa.
SATURDAY: Brussel sprouts with tempeh stir fry.
SUNDAY: Pasta with vegetables. I’m thinking bow tie pasta with green beans, broccoli and maybe some butternut squash.
