We’ve been trying to not eat meat or pasta/starches lately, at least during the week. So here are some relatively healthy recipes I’ve found for this week.
SATURDAY: Tomorrow I feel like making something hearty that I know how to make. Maybe Chicken Posole or another Mexican soup.
SUNDAY: Roasted Fingerling Potatoes and Brussel Sprouts with Garlic and Rosemary
MONDAY: Protein Power Chickpea Salad (LOVE this blog.)
WEDNESDAY: Wild Rice & Roasted Butternut Squash Salad
THURSDAY: Creamy Parsnip and Potato Soup
FRIDAY: Bulgur & Cauliflower Salad
